Chicken Soup in Coconut Milk


Raw material

Chicken with bones removed, cut up into small pieces
Coconut milk can of coconut juice to add as needed or carnation milk
Sliced mushrooms
Ginger root
Chili pepper
Kaffir 6-7 Leaves
Lemon grass 2-3 pieces
 Corianders
Garlic
Fish sauce
Sugar
Lime juice

Water



Steps 1.  Boil the ginger, lemon grass, lime leaves, and garlic in two cups of water.

Steps 2. Add the chicken pieces to the boiling water and continue to boil for 8 minutes until chicken meat is cooked completely.




Steps   3. Add 3 tablespoons of fish sauce and the lime juice, ½ cup sliced mushrooms and 4-5 fresh chili peppers and bring back to the boil for one full minute.



Steps   4. Add one can of coconut milk and bring the mixture back to the boil again for another 3 minutes.

Steps 5.  When all ingredients are heated that remove from heat and serve over white rice.
